I think these older phones take more detailed and sharper images than modern ones in a good light.

I don't know what is it exactly, maybe it's HDR, like davidsic is saying, but modern images look either like cheap, shiny, plastic or oil/water painting at full resolution. Thick lines, no details at smaller scale, it's like pixels are larger and blurred.
